Quality & Good Taste

The cuisine of the Castillo reflects its European origins along with the traditional gastronomy of the region. The homemade breads and pastas are made from traditional recipes that accompany the main courses with a new element: the incorporation of an ever increasing number of organic vegetables and herbs from our own garden and local organic producers.

We are continually experimenting, seeking new culinary challenges and improving the quality and healthiness of our food.

The restaurant is also served by an italian-style cafe that is currently innovating with alternative organic milks made from nuts as well as new flour options.

Organic Garden

Eco seal certification

Our organic garden faithfully reflects the nature of the Mediterranean origins of the Castillo itself. The perennial plants such as the artichokes, the asparagus and the sage, together with other aromatic plants from the European culinary tradition frame the beds of vegetables that end up on the restaurant tables.

The microclimate of San Lorenzo allows for the harmonious coexistence of tropical plants such as mango, chirimoya and sugarcane with the Nordic kale, and universal legumes. The citrus trees accent our Mediterrean legacy but the imposing avocado trees that surround the Castillo proudly affirm our Latin American identity.

The horticulture is carried out from the start with soil from composting, a practice which has been maintained for more than thirty years in the Castillo, and no type of chemical pesticides or fertilizers are used in the planting. Our aim is to be able to produce organic products in a sustainable way to provide our restaurant exclusively, thereby assuring the quality of our food.

Currently, El Castillo has ISO 14001 environmental management certification granted by IRAM.

HISTORY

Castillo de San Lorenzo

Towards the end of the nineteenth century, the Italian Luigi Bartoletti, a gunsmith by trade, married a young woman from Jujuy, Adelina Bassani and settled in the city of Salta. Bartoletti became a successful merchant, founding an important “general store” located on Florida Street. The prosperity of the Bartolettis enabled them to build this summer home or “villa” in the style of a “Castello”, characteristic of northern Italy.

Due to the rugged nature of the terrain a deep foundation had to be excavated, using dynamite probably for the first time in Salta. The stones were brought by muleback from the San Lorenzo and Castellanos rivers, and as a novelty, cement was used in the construction. The buttressed ceilings and floors were made with the railroad tracks. The fence surrounding the Castillo was made from Remington rifle barrels once used in the war of the Triple Alliance against Paraguay.

The Castillo was restored in 1986, opening its doors as a Restaurant and several years later as a hotel, offering its services in the best style of Don Luigi Bartoletti’s day.
